Ingredients

For 6 persons :
  • 1 jar of eggplant riste 600g Jean Martin
  • 1 shortcrust pastry
  • Raw vegetables: carrots, cherry tomatoes, zucchini, turnip, blue radish, pepper, white and red onions
  • A drizzle of olive oil
  • Salt and pepper
  • Parsley for garnish

Recipe

Spread a nice layer of eggplant riste on a shortcrust pastry.

Arrange some sliced vegetables.

Place in the oven for 30 minutes at 180°C.
