Caponata tart Jean Martin

Ingredients

For 4 people:
Dough house :
  • 200g flour
  • 80 g butter (or 50 ml olive oil)
  • 30 g grated Grana Padano
  • 75 ml of water
  • 1 teaspoon of Provence herbs
  • Pinch of salt and pepper
Trim :
  • 1 jar of Jean Martin Caponata 360 g
  • 2 eggs
  • 1 tablespoon of breadcrumbs
  • 1 burrata
  • 1 handful of rocket

Recipe

Mix the dry ingredients and add the butter. Add the water gradually to form a ball.

Cover and refrigerate for at least 30 minutes.

Spread in the buttered tart pan.

Pour the Caponata into a bowl and mix with 2 eggs.

Pour into the tart base, first adding a little breadcrumbs or a crushed rusk.

Bake for 40 minutes at 180°C.

Serve warm or cold with burrata or mozzarella, arugula and a drizzle of olive oil.
