Risotto à la courgette et Pistou

Ingredients
For 4 people :- 1 jar of Pistou
- 250 g of round Camargue rice
- 2 zucchini
- Olive oil
- sour cream
Recipe
Grate the zucchini with the skin on (non-fine grater).
Brown them in a pan for a few minutes in a drizzle of olive oil.
Add the rice and let it brown for a few moments.
Add 2 and ½ times the volume of rice in water. Salt.
Cook until the water evaporates. Add 10cl of crème fraîche and the jar of Pistou.
Serve hot with thin slices of raw ham.
