Crème brûlée recipe with broken olives

Ingredients
For 6 ramekins, you need:
- 125 g split pitted olives
- 350 g of whole liquid cream
- 150 g of egg yolks (approximately 8)

An astonishing dessert, gently aniseed!
Pit the olives, collect a few sprigs of fennel then infuse them in a saucepan with liquid cream. Preheat the oven to 100°C Whisk the egg yolks for a few seconds, then add the cream.
Spread the olives at the bottom of the ramekins, then add the preparation (be careful not to fill the ramekins all the way to the top).
Bake the ramekins in a bain-marie for 1 hour at 110°C.
After cooking, put brown sugar on the creams and caramelize them on the grill or with a blowtorch.
