Recipe for sweet potato gnocchi, Ratatouille sauce Jean Martin

Ingredients

For 4 people :
  • 1 jar of Ratatouille 360g Jean Martin
  • 1 sweet potato
  • 1 large potato
  • 1 egg
  • 100g parmesan
  • 100g of flour
  • 50g cherry tomatoes
  • 50g cooked chickpeas
  • 1 teaspoon of paprika
  • Salt and pepper

Recipe

Peel and roughly chop the sweet potato and the potato.

In a pot of boiling water, cook the sweet potato and the potato for 15 minutes.

Drain and mash.

Add an egg, salt, pepper and a little paprika. Then gradually add 50g of parmesan and the flour. Mix until you get a paste

Make rolls and cut to form gnocchi.

In a hot pan, pour the chickpeas and tomatoes in a drizzle of olive oil and a pinch of paprika.

Add the gnocchi and brown everything.

Pour in the ratatouille.

Serve with a few coriander leaves, parmesan and a few slices of yellow beetroot for decoration.
