Club sandwich with Thoïonade Jean Martin

Ingredients

For 4 sandwiches:
  • 1 jar of Thoïonade 110g Jean Martin
  • 8 slices of sandwich bread
  • 1 eggplant
  • 2 tomatoes
  • Fresh cheese, Kiri type
  • Rocket
  • 1 red onion, finely chopped

Recipe

Cut the eggplant into 5mm slices lengthwise. Place them on a baking sheet covered with parchment paper and salt generously. Let sit for 5 to 10 minutes, then pat the eggplant slices dry with paper towels.

Brush them with olive oil and bake for 20-30 minutes at 200°C.

Generously spread 4 loaves of bread with Thoïonade then layer a few slices of grilled eggplant, a slice of tomato, a little chopped red onion and arugula.

Spread the other 4 loaves of bread with Kiri-type cream cheese and cover your sandwiches.

Cut them in half diagonally… and go on a picnic!
