Gourmet filet mignon with piperade Jean Martin

Ingredients

For 1 burger:
  • 1 jar of Piperade 600g
  • 1 pork tenderloin
  • 10 slices of smoked scarmozza or mozzarella
  • 10 slices of chorizo

Recipe

Place the filet mignon on 2 chopsticks then cut it into thick slices.

Insert slices of chorizo and smoked scarmozza (or mozzarella) between the slices.

Pour the 600g jar of Piperade into a casserole dish and fry for a few minutes.

Place the garnished filet mignon in the casserole dish, cover and put in the oven for 50 minutes at 180°C.
