Eggplant Parmiggiani Pizza Recipe

Ingredients
For 4 people:- 1 jar of eggplant parmesan 600g Jean Martin
- 1 pizza dough
- Coppa slices
- Parmesan pieces
- Black olives
- Basil leaves
Recipe
Preheat the oven to 180°C. Spread the dough on a floured baking sheet. Cover with a thin layer of Eggplant Parmesan and bake for 10 minutes.
Remove the pizza from the oven, add a generous layer of eggplant parmesan then sprinkle with chiffonade coppa. Decorate with basil leaves, parmesan shavings and olives.
Bake again for 10 minutes at 180°C.
