Turkish pancakes Riste

Ingredients

For 4 people:
  • 600 g of eggplant riste
  • 200g flour
  • 12.5 cl of lukewarm milk
  • 10 g of fresh baker's yeast (1 tsp of dry baker's yeast)
  • 1 teaspoon of salt
  • 1 teaspoon of sugar
  • 20 g softened butter

Recipe

The dough: In the mixer bowl or by hand make a dough with all the ingredients, it must be firm and not sticky, slightly elastic, cover and leave to rest for 45 minutes.

Shaping: Divide the dough into 7 equal balls, spread thinly on the work surface in a round shape.

Turkish pancakes Riste 1

Put 2 tbsp of eggplant riste on one side then fold, sealing the edges well to obtain a slipper shape.

Brown for a few minutes on each side over medium-low heat in a lightly buttered pan.

Enjoy warm.
