Quesadillas à la Crème d'aubergine

Ingredients
- 1 jar of eggplant cream 110g
- 2 wheat tortillas
- Clotted cream
- grated goat cheese
- lime
- coriander
- Mexican spices
Recipe
On a tortilla, roughly spread 2 tbsp of eggplant cream, 1 tbsp of thick crème fraîche, 1 handful of grated cheese, fresh coriander, ½ lime juice and Mexican spices.
Fold each of the 4 sides inwards to form a pad.
Brown the tortilla in a pan in a drizzle of cooking oil on both sides.
Serve with a nice salad.
