Salade de Riste, anchois et poivrons

Ingredients
For 6 persons:- 1 jar of eggplant riste 600g
- 1/2 fresh pepper (100g)
- 4 spring onions (60g)
- 6 anchovy fillets
- Sherry vinegar
Recipe
Cut the pepper and spring onions into small cubes, and the anchovies into 3.
Mix them with the eggplant riste and add a drizzle of sherry vinegar.
Place in the refrigerator and serve very cold with a grill or plancha.
