Recipe for muffins with eggplant, fresh goat cheese and hazelnuts

Ingredients
For 4 people :- 1 kit of eggplant bread 570g Jean Martin
- 5 eggs
- 3 tablespoons of flour
- 1 teaspoon of baking soda
- 3 handfuls of hazelnuts
- 100g fresh goat’s cheese
- Some pea sprouts
- Optional: edible flowers
Recipe
Preheat the oven to 180°C.
Crush the hazelnuts and keep a handful for dressing.
Mix the preparation with the eggs. Gradually add the flour and bicarbonate.
Add the crushed hazelnuts.
Mix everything and pour into muffin molds.
Bake for 20 minutes at 180°C.
Leave to cool for a few minutes.
Add the fresh goat cheese on top of the muffins and sprinkle with hazelnuts.
Add some edible flowers and pea sprouts.
