eggplant and chestnut beef meatballs, Jean Martin style

Ingredients

For 4 people :
  • 1 jar of eggplant riste 360g Jean Martin
  • 2 chopped steaks
  • 50 g canned cooked chestnuts
  • 1 bunch of coriander
  • 200g basmati rice
  • 1 onion
  • 1 clove of garlic
  • 1 tablespoon of paprika
  • Salt and pepper

Recipe

Slice the onion and garlic.

Mix with the minced meat.

Chop the coriander and add to the preparation. Salt, pepper and add the smoked paprika.

Add some crushed chestnuts. Keep a few for training.

Mix everything and form balls.

Roll in flour and set aside.

Cook the rice beforehand and set aside.

In a hot pan, brown the meatballs in a drizzle of olive oil.

Pour in the eggplant riste and lower the heat.

Sprinkle with coriander and the rest of the chestnuts.

Serve over rice.
