Recipe for Savory Waffles with Sweet Potato and Onion Confit

Ingredients
For 2 people :- 1 jar of onion confit 140g Jean Martin
- 1 sweet potato
- 1 parsnip
- 1 carrot
- 1 potato
- 1 slice of Chioggia beetroot
- 1 pear
- 1 turnip
- 1 egg
- 2 tablespoons of flour
- 1/2 packet of yeast
- Salt and pepper
- Olive oil
Recipe
Peel the sweet potato and the potato. Steam them then mash them to make a puree.
Add the egg, flour and yeast.
Salt and pepper.
Pour the batter into the waffle iron and cook 2 waffles.
Preheat the oven to 200°C.
Peel the parsnip, carrot and turnip. Roughly cut them, place them on a plate and brush them with olive oil. Salt and pepper.
