GOLD medal at the Concours Général Agricole de Paris 2023
This AOP Provence “Noir d’Olive” comes from the young olive orchard planted in 2008 in the very protected territory of La Crau. A subtle blend of Aglandau and Salonenque varieties, this oil wonderfully reflects this very arid terroir littered with pebbles which adjoins the Etang des Aulnes.
We particularly like Noir d’Olive AOP Provence for its beautiful aromatic complexity. The dominant taste of cooked artichoke and black olive confirms its classification as “fruity matured olives”. The secondary flavors of vanilla and floral soften and elegantly accompany the hint of heat. The balance and finesse of this olive oil suggest well-controlled maturation.

It is used cold in garlic salad, to make mayonnaise and drizzled on confits, mushrooms and mashed potatoes.
